Vanilla Sugar Cookies

•2 & 3/4 cup flour
•2 teaspoons cream of tartar
•1 teaspoon baking soda
•1 teaspoon salt
•1 & 1/2 cup sugar
•1 cup (2 sticks) butter softened to room temperature
•2 eggs
•2 teaspoons pure vanilla extract
•Additional sugar for rolling

1.Mix flour, cream of tartar, baking soda and salt in a large bowl. Set aside.
2.Beat sugar and butter together with mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually mix in flour mixture on low speed until well mixed.
3.Refrigerate 2 hours or until firm.
4.Shape dough into 1 inch balls. Roll in additional sugar to coat. (Use red or green sugar for Christmas cookies) Place 2 inches apart on ungreased cookie sheets.
5.Bake at 375 degrees (preheated oven) until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks, cool completely.
Makes 4 & 1/2 dozen.
