Hermits

From my Betty Crocker Cookbook. I used to make these a lot when the kids were small.
•2 cups packed brown sugar
•1/2 cup shortening
•1/2 cup margarine or butter (softened)
•1/2 cup cold coffee
•2 eggs
•3 & 1/2 cups flour
•1 teaspoon baking soda
•1 teaspoon cinnamon
•1/2 teaspoon salt
•1 & 1/2 cups raisins
•1 cup chopped nuts
Preheat oven to 375 degrees. Mix sugar, shortening, margarine, coffee in a large bowl till creamy. Mix dry ingredients together. Add to sugar mixture a little bit at a time. Stir in raisins and nuts. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8 – 10 minutes until set and lightly browned. Remove from cookie sheet and cool. Makes about 6 dozen cookies.
***These are really good with a dab of butter cream frosting on top. If you do frost, store in container in the fridg.
