Spritz Cookies

At Christmas time Jim’s mother made spritz cookies in a ribbon shape. She would frost these with chocolate or pink frosting and package them up in tins for her grandchildren. The grandkids all loved Granny De’s Christmas cookies. They were a labor of love from her to her beloved grandchildren. After she passed away it fell upon Jim and me to make these cookies for the grown grandchildren. After Jim passed away in December for the first time in many years there were no ‘granny’ cookies at Christmas.
•2 sticks of margarine or butter softened
•1/2 cup of sugar
•2 and 1/4 cups flour
•1 teaspoon vanilla
•1 egg beaten
Preheat oven to 375 degrees. Mix margarine and sugar in a medium bowl. Add beaten egg. Stir in the remaining ingredients. Place dough in cookie press using the desired tip. Press out on ungreased cookie sheet. Bake about 9 minutes until set but not brown. Remove from cookie sheet and cool. You may spread powdered sugar frosting on cooled cookies, or before baking you may sprinkle them with colored sugar. Another tip: add a tiny bit of food coloring to the dough.
Creamy Frosting
1 and 1/2 cups powdered sugar
1/2 teaspoon vanilla
2 to 3 tablespoons water
Mix all ingredients until spreading consistency. If you like you may sprinkle some colored sugar on after you have frosted the cookie.
