Raw Apple Cake

This recipe is from my sister Rae’s best friend Faye in WV.

Have oven preheated to 375 degrees. Use ungreased tube pan or 13 X 9 pan. Bake for 50 minutes in tube pan or 30 – 35 minutes in the 13 X 9 pan. Test for doneness with toothpick.

Sift 2 cups flour together with 1 teaspoon salt, 1 teaspoon soda and 1 teaspoon cinnamon. Set aside.

Cream 1 & 3/4 cups sugar, 1 cup Wesson Oil and 3 beaten eggs.
Add flour mixture, then fold in 2 cups finely chopped apples and 1 cup chopped black walnuts.

If you like you may frost with cream cheese frosting but it is scrumptious just served plain or with whipped cream.

•1 (8 ounce) package cream cheese, softened
•1 tablespoon milk
•1 teaspoon vanilla extract
•1 pinch salt
•2 1/2 cups confectioners’ sugar

Mix ingredients with mixer until smooth.
