Quick Buttermilk Biscuits

In 1999 my daughter’s father-in-law Henry was Commander of the Creve Coeur American Legion 1234 at Creve Coeur Illinois.  At that time Henry’s wife LaVona together with other members of the Legion Auxiliary put together a cookbook as a fund raiser.  I, along with my daughter, have several recipes published in that cookbook.  From time to time I will be printing some of the recipes. 

Starting today with buttermilk biscuits:

 

  • 2 cups self-rising flour
  • 1/3 cup shortening
  • 3/4 cup and 1 tablespoon buttermilk

Combine flour and shortening in mixing bowl.  Cut in shortening until it looks like coarse meal.  Stir in all of the buttermilk.  Turn out on a floured board.  Knead lightly 3 or 4 times.  Roll 1/2 inch thick and cut with a 2 & 1/2 inch cutter.  Place on ungreased baking sheet.  Bake in a preheated 425 degree oven for 10 – 12 minutes.  Makes 10 biscuits.
