This recipe is from my cousin-in-law Vickie. Many years ago I made a similar version that was called brown raisin bread that I baked in soup cans. I am sure you could do that with this recipe if you wanted to. Just be sure and spray the cans with cooking spray and fill about 2/3 full.
•2 cups brown sugar
•2 cups water
•2 cups raisins
•2 tablespoons shortening
•1 teaspoon salt
•1 teaspoon cinnamon
•1 teaspoon cloves
•1 teaspoon baking soda
•2 cups flour
Boil sugar, water, shortening, salt, raisins and spices together for 5 minutes. Set aside to cool. Preheat oven to 325 degrees.
Mix baking soda with flour. Add to cooled raisin mixture. Grease loaf pan, soup cans, or 8X8 pan. Bake for about 40 – 45 minutes or until toothpick inserted comes out clean.
